What's a beignet? Beignet (pronounced ben-YAY) is French for donut or fritter, but beignets are much, much more. This flavorful, square, deep-fried pastry is a time-honored tradition in New Orleans, and they're the official state donut of Louisiana too! Beignets have a long and storied history, going back to Mardi Gras in France (that other Mardi Gras) since the sixteenth century.
